Is there a easy way to pull up all the routes that the AC 787 and 777 planes fly?

Not really, because equipment swaps happen and Air Canada's general condition of carriage does not indicate that they must fly a certain aircraft to take you from A->B

South America destinations that are mainline operated (GRU/EZE/SCL) are always operated by 787 or 777. The aircraft type is adjusted seasonally. Asia destinations are also all operated by 787 and 777 (except for YYC-NRT).

You could always go to flightradar24.com and filter for only Air Canada 787 or 777 flights, and you'd see what flights are currently in the air.

Yes, there is a (relatively easy) way to tell.

https://services.aircanada.com/porta...metable-en.pdf

Look at the timetable starting on page 29. Look at routes out of YYZ, YUL, YVR and YYC. AFAIK the 777/787 doesn't typically fly routes unless from one of these hub cities (except maybe for irregular operations where you might get an international flight out of YOW, YHZ, YYT).

YYC starts on page 34
YUL starts on page 65
YYZ starts on page 90
YVR starts on page 100

Just do a sample booking. I mean AC only flies to a few cities in S America.
