Are you sitting on the wrong side of the plane and/or only flying in bad weather?
Bad weather being when the ceiling is below about 2000'. And/or winds not from the west.
When the weather is good, the preferred configuration is landing two side by side westbound about 5 miles apart.
In that gap, two will depart northbound side by side.

When I took my video, everyone on board was looking out the window, even those on the other side of the plane.
As for bad weather, that's harder to say. I will note that most of my flights into SFO are not during daylight. Maybe it's generally less busy and there isn't a second plane landing at the same time?
Even taking off, my experience doesn't match what you say. They always alternate. If I'm on 1L, 1R will take off, then after a delay (maybe 30 seconds?), we'll take off.

Recall I mentioned to you that I was in the YVR Dom MLL at the same time, looking out the window, wondering why the blue bird was there for longer than usual.
I took these from the MLL. Same bird?
