That doesn't always work. Then what if the day of departure comes around, it's J0? Then he'll be stuck in Y class. He's not SE so he doesn't get first crack at any remaining seats at the airport.
He wants to know whether it's a wiser choice to just fly on UA so he can at least guarantee himself E+. I think it is as long as he can find a flight that has E+ (as some Europe flights on UA are operated by non E+ 777).

I'm confused as to what you see as not working in my suggestion. At 3 days out you effectively "buy" the C ticket (i.e. buy the Y and UG all in the same phonecall). If no UG availability I personally wouldn't chance waitlisting (as you would lose the Q). Of course you could keep an eye on ITN and if C rises, that is the moment to pounce! Where does the day of departure problem come into it? Sorry if I am missing something else here.
I agree about UA - which is a different decision. For me it would come down to cost probably. I assume that the UA flight requires a change? That would be the other factor. CDG-YUL is not that long a flight that I would be too worried, other than in a domestic 767. I have found AC very good lately in helping me find rows with empty seats etc where possible, which is as good as E+.

I stand corrected, for the summer months, it seems that:
AC885 CDG-YUL and
AC884 YUL-CDG
are operated with B767-200 Domestic, in which the domestic J class is being assigned to "Preffered Seating" for P, E, SE and *Gold members.
This is not just an F1 weekend flight, it is summer long
Lets see how this goes over.
