I've never been, but would definitely be interested in seeing the "Lucy" exhibit at the National Museum there. (Lucy lived around the rift valley over 3 million years ago)
Also, I think Ethiopia is one of the earliest regions to accept Christianity. Might be some churches of interest.

For eating, the most important thing is to get out of Sheraton and Hilton first, there are lots of options for food, depending on what kind you like (and how spicy). Lots of nice options for Ethiopian national food, but also some Italian, Korean, Indian, Georgian, etc.
