Stellenbosch recommendations
Hi
Planning to stay for 2 nights near Stellenbosch mid-December. I’m looking for somewhere with a pool and plenty of open space to chill out at the beginning of my holiday. I’ll have a car but ideally would like to have eating options on site. Budget is ideally maximum of Ł150 p/night.

Eish. It's been a while (my mother in law moved over towards Somerset West). But, I'd recommend Lanzerac or Delaire. I'd bet that they're going for more than Ł150 nowadays. Both definitely have excellent restaurants on site and I've never spent a night there that wasn't beyond enjoyable. That said, Stellenbosch has a wide range of affordable hotels there's at least one Protea that's more mid-priced (IMO). Don't know if it has a pool.
If you're driving, I've always always enjoyed Wijnhuis restaurant

and Tokara

For 2 nights in Stellenbosch, I would recommend the guesthouse 'Kolonies Tuin', they are on Booking.com as well. We stayed there twice in 4 months. They have parking, and a pool, and are within a 5-10 minute walk to town, next to the river. It's easier to park there and walk around town. Use your car to visit Boschendal Winery etc.
