I had a really good one a couple months ago in a cafe in Palm Springs (cannot remember which one). It had thick slices of grilled sourdough with parmesan cheese grilled on the bread and several kinds of cheese melted inside. It had brie, gouda, and some others. That was the tastiest grilled cheese sammie I have ever eaten!
