The cheesesteak wouldn't taste the same. You'd need to use water from the Philadelphia water supply - either the Delaware or Schuylkill Rivers. That's what the bakeries here in PHL use for their hoagie/cheesesteak rolls. My home water supply comes from the Schuylkill River. To me, it's the roll that makes a big difference.
