Some airlines offer it, Aloha and Hawaiian come to mind (good for one year, but open dated), American use to (though theirs was a round trip ticket, not to a specific destination), but I can't think of any who currently offer open ended tickets someplace.

Way too many people, myself included, would buy a few of those to redeem when the fares were higher then the cost of the voucher or whatever.
