Good grief! The mussels in Belgium really are different.
At a recent dinner in a small town south of Gent our local Flemish hosts ordered the whole table meaty, succulent, tasty...almost perfect mussels cooked in white wine and onions. And the Belgian frites with three different mayos that came alongside were a brilliant match for the moules. A few dark Leffe beers to wash it down and a calvados afterwards..ahh.
