Microwave Fudge
OK, so I'm known in some circles for making decadent desserts from scratch and can be a bit of a food snob. That being said, I know when I am beaten. This fudge recipe has been very well received and one of my Aunts (who is a brilliant cook) raves about the "smooth texture" of the fudge that I make, but has never asked for the recipe (thank heaven.) My fear is that someone will ask me for the recipe, and I have actually played "the secret family recipe card" rather than admit that this fudge hasn't been made over a hot stovetop with the candy thermometer. *hangs head in shame.
1 (14 oz.) can sweetened condensed milk
1 (12 oz.) pkg. semi-sweet chocolate chips
1 tsp. vanilla
In large bowl, combine condensed milk and chocolate chips. Microwave on high 1 1/2 to 1 3/4 minutes or until melted, stirring once. Stir until smooth, add vanilla and stir well. Pour into greased 9x9 inch pan. Refrigerate until set. Makes 1 pound 9 oz.

I modify the recipe, reducing the amount of semi-sweet chocolate chips with some unsweetend chocolate, so it's not quite so sweet. Sometimes I will add either peppermint, orange, or almond extract. The peppermint and the orange have received raves. YMMV.
