We're hiring a car so being a bit further out is not a problem.
How about the Residence Inn at the Hughes Center - it offers full kitchens (full size fridge, stove, microwave, coffee maker etc), free internet access and it has the new Marriott "mid-range" bedding - currently showing $129 per night. Free hot breakfast, too

It's about 1 mile from the Strip and 1.5 miles from the Convention Center:
