There should be no problem at all leaving, returning and getting another VOA, however 60 day single and multiple entry visas (main difference is the fee) are also available in advance pretty easily from overseas consulates and embassies if you intend to stay 60 days. Limited stay visas up to a year are even fairly easily obtainable with more documentation and possibly in country sponsorship and are extendable once in country. So long as you are demonstrably well funded, Indonesia is not a difficult country to remain in.
