Just IMO of course:
My typical order: Pho Chin Nam Gan (cooked brisket, cooked flank, and tendon), with a side of hot chili oil for dipping in the hoisin sauce.
-Pho Hoa (US) is crap.... way too much fatty broth.
-Pho 24 (VN) also crap. The broth tastes weird, as does the hoisin sauce.
-Favorite mom-pop pho store is Golden Deli in San Gabriel, CA.
-Favorite mom-pop pho ga (chicken pho) is a place by the Stater Brothers on Brookhurst and Hazard in Westminster, CA.
-My favorite chain is Pho 79... try ordering a bowl of their soup bones.
-Best pho in Saigon is Pho Hoa Pastuer, on Pastuer (but do NOT eat the condiments on the table... both times I have, I've had "digestive issues," but without the condiments (I'm guessing the hoisin sauce) I've been ok. Bring your own if you want.
-In general, the best pho is in California... nowhere else in the US has it been good.
