The previously mentioned "make your own" pancakes in DeLeon Springs is on my short list of places to hit, but I have not yet.
My favorite (sort of) local place is
Breakfast Club in Orlando (Magnolia and Pine, I think). They have incredible banana crunch pancakes, and are quite reasonably priced.
My favorite place - ever - is
Grove Cafe in Ames, IA. I can only say that the picture on
this thread does not do the Grove pancake justice.
