A must for any pancake lover is the restaurant at the DeLeon Springs State Park in Florida, north of Orlando. They give you the batter (various kinds) and you make them yourself at your table. Truly excellent pancakes.
Of all places, I also remember Alaska in general having very good sourdough pancakes. It seemed like many of the breakfast restaurants competed on their pancakes, with claims like using ancient "starter" and such. At the moment, I can't remember my favorite, but I don't think I've ever had a bad plate of sourdough pancakes in Alaska.
