We love this hotel. While I can't comment on the equestrian center, there are so many other activities included, like the golf and the water sports, you won't be bored. Service is also fantastic.
I don't think that they could really stop anyone from "sneaking into" the pool, but I don't think it's a major concern, either. Just take the same precautions that you would anywhere else.
