Before a transcontinental flight

Hi,

Are there any command pilots who fly intercontinental routes who could tell me what sort of things go on a few hours prior to an intercontinental flight (I'm talking about checking weather, weight and balance, etc.). I'm especially interested in who does what, and when. The reason for this is I am thinking about writing something about flying and want to get it right, especially during preflight planning stage.

Thanks in advance for any help with this or with help directing me to a source where I can find this sort of thing out.
