Are most (non-ultra-busy) sectors OK for a paid UG ?

I've read (probably here on FT) that there are only certain places from where one can buy/redeem to u/g at the last moment, but can't remember for sure.

For me, I've only paid on CX BKK-HKG (many times) and KA HKG-PVG-HKG (HKD550 on the way up and RMB600 back down). All at check-in.

Used miles at check-in/in the lounge to u/g from HKG to various destinations.
