I just booked the Fairmont in Ottawa for 3 rooms so it is quite a difference between $300 CAD and $300 USD.
It's "always" $100 USD. However, since everything is charged in local currency, that means properties get to convert that into a local currency equivalent. Sometimes that benefits you, and sometimes you lose in the conversation.

When you check in, they will tell you how much credit you get.

On my recent trip last week, it converted to roughly $117.
