Some of this is due to airport configurations or a difference in security rules between domestic and international flights. For instance, you mentioned LHR, which would be difficult to operate one stop security at scale. There are some limited flights with one stop security with AA and BA. In Australia, the international and domestic terminals are often physically separate (and there are fewer restrictions on domestic flights, such as liquids), so domestic to international travelers must be rescreened.
