Similarly, I have 3 young children and I can confirm that when I am booked on the same PNR as any of my kids, the AA website/app do not allow any of us to select seats in the exit row. I couldn't even put myself with all the kids in non-exit row seats, then assign my wife to the exit row, so I think the only way to accomplish this would be to have separate reservations, with the adult booked separately able to choose an exit row.
Although since this was a lap infant, and assuming it was a domestic flight, it's possible that they didn't add the infant at booking, and therefore could have selected seats, but the lap infant would need to have been added to the ticket before going through security, where they look for a boarding pass to say "PLUS INFANT."
