I dislike both and usually order the quiche, even though I dislike airline eggs. The sides are good. You can't mess up potatoes and (single!) sausage.
You might want to try asking for the grilled cheese or beef melt snacks as your breakfast. A kind flight attendant on my MEL-SFO suggested that I have some of the mid-flight hot snacks when she took my breakfast order.
Mustards is good. If you have a Priority Pass that includes restaurant use (Bank of America card, etc.), it's a no-brainer choice. I'm a fan of their fish and chips or lamb burger.
If you're looking for something a bit lighter, the sandwiches at Napa Farms Market or even Bun Mee (F food court) are solid.

I just had one on SIN-SFO over the weekend and it was absolutely delicious. Texture and taste were just almost perfect.
The catering out of SIN deserves the credit.

They had some excellent halibut on HKG-LAX. It was tender and very tasty.
So hard to guess what you'll get! I ate a lot at the Singapore lounge beforehand as insurance.
