CSP/UR vs Amex decision

Hubs and I have used the CSR as our main shared card for about 9 years now (since it came out). With the recent announcement of increased annual fee and more coupon-clipping needed to get the various credits, I'm not going to renew it. I'm debating between closing the CSR and opening a new CSP to get the bonus (I am well under 5/24 and haven't had a CSP since I got the CSR), or closing the CSR and switching to an Amex Gold.

I usually transfer UR points to United or Hyatt, but sometimes I buy travel through Chase's portal too. But I'm not wedded to United/Hyatt. If I went to MR, I'd probably just transfer to whatever airline I could find business class award availability on. I like transferring to Hyatt because it's often the lowest points needed for a room. CSP is I think 3x on dining and 2x on travel, while Amex Gold is 4x on dining and 3x on flights but 2x on prepaid hotels. It seems the Amex is better (since travel and dining is a lot of what we spend on). I am also a little concerned that Amex isn't as widely taken overseas, the couple times a year we go somewhere international.

I guess I'm just curious what people thing/other things I should be considering. Oh, I have a CFU as well, which I can use to store any points that might get left over.

Thanks
