I can easily cover the AF with stubhub, doordash and the travel credit (assuming that remains). The restaurants

That doesn't work for me, as I strongly prefer to book direct with hotels and airlines and not through "portals." So I rarely end up using Citi, Amex and other hotel credits, and expect that would be the same for Amex.

I think that is true as a general proposition. However I find Chase UR far much more useful as I can transfer them to UA and Hyatt, where I have little trouble finding excellent value. Amex arguably has more transfer partners, but they require more work and rarely seem to cover the dates I need. YMMV

Does Ink provide the same level of travel insurance coverage as CSR?

Agreed. Although I've not had to invoke it, I like charging everything to Chase knowing it will automatically be covered by the comprehensive travel insurance. Now I will have to decide piecemeal what I need to cover.
