Why not Park Hyatt for the views? FS really doesn’t look great and appears to have lots of cruise passengers
We only stay in Suites (in properties where they have it), and the Harbour Suite, Opera Suite and Sydney Suite (the thee suite categories with views of the Harbor and Opera House) are all taken on the dates we intend to be in Sydney.
