It depends probably on what you want to do and preferred area as Dubai is large and the palm is a distance from the main sightseeing points

I stayed at the WA palm, WA DIFC and Conrad last week . All very good hotels. other areas would be the Curio and Canopy in Al seef ( dubai creek)
Diamond will give free full breakfast to at least 2 and probably your son also ( as well as free lounge access at the hotels with lounges ( Conrad & Hilton palm at least)

Any of the Hilton properties would give breakfast for at least 2 for Diamond status? Not like in US where they give you a couponfor 60% off the cost of the basic breakfast and still have to pay $20?
I think the location would be downtown, jumeria or marina.
