I would agree Explora is not a good choice for a vegan or strict vegetarian as there's really not that much on offer. Ownership (which has an unimaginable amount of money to play with - and not responsible for it to anyone other than to themselves) seem to want to do things their way. As for the non-changing menu, I wouldn't actually mind this even on a multi-week cruise as I can take my time sampling everything of interest and then going back to what I liked most (other than for the likelihood that it may never be prepared the same way again).
