The only documents that have her name at this address are her vehicle registration and her W2. Any idea if these will work for CBP? If not, during the interview, can she ask to change her address? She has mortgage statements/utility bills/driver's license all matching for one of the other residences.
It should not be a problem, the addresses on the vehicle registration and W2 should suffice. As far as I can tell, they are flexible about it, even temporary addresses are acceptable.

From the CBP Knowledge Article: Trusted Traveler Programs Application - Address Information Page
If you do not have a fixed residential address for any period during the past five years, please include all locations where you resided temporarily. This may include RV parks, the addresses of friends, family, or rental facilities where you may have stayed, or other locations.
