Mum says its shredded coconut. I don't bake, and I wasn't looking for this, but I think I'm going to have to try it out.

From memory these were more like an Anzac "slice" than a biscuit. I didn't even know they were Anzac biscuits until years later when I was remembering them and Mum said "oh you mean those Anzac biscuits?"
