Last Saturday night, I had one of the best meals of my life and certainly the best fish I've ever had - at Roy's in Poipu, Kauai, Hawaii. I had never even heard of butter fish before. It had been marinated for 48 hours in a soy/miso/ginger mix. Just amazing flavor. Light and flaky, like grouper. (Of course, finishing off the meal with chocolate souffle didn't exactly leave me with a bad impression either.)
I'm now anxious to try Roy's in Chicago.
