On my most recent trip, I just got plastic knives but real forks and spoons (US domestic) on NW.
However, I'm finding it's more and more common to get real knives when traveling in FC these days or up in Business or First Class for an overseas journey.
The only exception seems to be flights to the UK -- plastic knives always, even in FC/BC. If I fly from the US to AMS (NL) or another country, it's always metal -- and has been for quite some time.
