Thanks. Originally it was kinda watery when I was shredding the shoulder, so I did the dumb thing and set it on high (analog crockpot)... after a few hours, it was better, but there was a slight hint of a burnt smell to it (maybe the coconut milk started to scorch). I suspect it would have been fine if I had just left it on low or warm to let it evaporate a bit more. As it is, I've fished all of it out and put it in the fridge. Going to pan fry some in the morning to have for breakfast and use some of the curry there and see if it fixes it.
