LHR is among the world's largest airports and a hub for BA, so it offers a considerably higher number of connections than LGW. LGW is mostly a point-to-point airport. Most European non-low-cost airlines fly to LHR, rather than LGW. From most cities in Europe, the connecting flights to LHR are shorter than to MAD. I'd rather connect at LHR than make an international transfer at
any US airport.
The reason why LA will operated B763 instead of B789 on the LIM-MAD route in December and January is the lack of B789 crews in LA Peru.
