Try a seafood restaurant in Da Nang...all live in tanks from alligator, snails, stingray, shellfish --- ate it all and still a live.
Hanoi --- get tourist map...all places on map same as food tour which costs $25.....egg coffee, bun cha, etc.
Egg coffee is better taste, full cup, and cheaper in Hanoi than in SGN.
Hanoi walk the neighborhood to see how very poor live...wath them cut neck off a chicken and add blood to a salad.

Thanks for the recommendations. We have already finished the trip but did do a good number of the items on your list. I will post the review of Hibana soon.
