ATH is a relatively small airport (nothing to do with IST for exemple). 1 hour and 40 minutes is plenty of time, really. You don’t have to go through security.
As your whole trip is on one ticket, if your plane from ZRH was delayed you would be transferred to the next available flight to Santorini.
