I think 3 days in MVD is enough, not sure when you arrive, but a morning arrival could give you a chance to go around the town, then day 2 you do Punta del Este and day 3 you do Colonia and take the Ferry at 6 o 8pm.
What time do you arrive at IGR? if is in the morning you can do some other stuff like Wanda mines, the Ice Bar or Zip Line, and you can walk around the town. The Iguazu National Park it will take you a full day and you MUST do the Gran Aventura tour, do the park early in the morning (8am), take the train directly to Devils T., then do the other 2 trails, grab something to eat then Gran Aventura tour (last one is around 3pm), it take at least 90 minutes.
Now if you get an extra day, IGU is great and not too far as long you take a taxi (they have a dedicated lane to cross the border) and you can even do the Bird Park next to the Iguazu Falls (Brazilian side), or if you rush it, it can be done half day (the day you arrive at IGR).
wish we knew about Grand Aventura tour or what it consists of

as for the parks, Id strongly suggest if a person is short of time to go to the Brasil side over the Argentina side. that is if you want to see the falls rather then simply watch as water goes over the edge w/o watching it as the Falls. we found the AR tremendously lacking and would have spent alot more time on the BR side had we known what the AR side was like,
