I really like a good quesabirria taco. This trend has done nothing to enhance the experience. Sure, everyone sells them now by name only, but the truly good ones are still only found at the same few places that specialize and have been doing it for decades. Your photo proves the point. Those are NOT true quesabirria tacos. I also agree a good birria taco doesn't need cheese, though I don't mind it at all.
