So I booked an international round-trip through Chase UR and needed to cancel the trip. Chase UR website is not letting me make any changes to destination city, change to one-way, etc.

Have you tried making changes to the ticket on the United website?
Edited to add: try the united.com website, and if that doesn't work, HUCA the 1K desk to get someone to help take over the ticket. The agent you talked to didn't seem to know how to do it.
