Is it worth it to exit airport at 01.00 get an Uber check in, checkout then Uber back and of course clear security or just suck up the high price of the oryx. At least we could enjoy breakfast in the lounge as previously all my flights via Doha are just middle of the night connections. Any advice?
It all depends on what the avoidance of hassle means to you. Splashing out £260 for the Oryx versus £20* for the Sheraton Four Points suggests a healthy travel budget and/or a strong aversion to inconvenience.

It sounds as though you might be rationalising an airport stay, which is fine - your choice: maybe it's a honeymoon
But the lounge breakfast will be waiting for you whether you arrive from Oryx or Sheraton. And as for the hassle, QR goes out of its way to make airside exit and entrance as easy as it can for premium-class passengers, and taxis are easy to arrange, hassle-free and relatively cheap.
