This was my third time seating at the sushi bar at Shin. We've ordered the takeout boxes twice during the pandemic closure and ate at a table right after he reopened indoor dining after the pandemic closure ended and before he resumed serving exclusively at the bar. This was probably my least favorite meal there; the chef is just as entertaining and the fish is as good as ever; however, I didn't care for the three seared nigiri courses, two of them were seared with charcoal. I thought that the charcoal smoke overwhelmed the delicate flavor of the fish, especially the otoro. As I posted on Facebook, I liked my recent full note omakase at Michelin listed, but unstarred Sushi Note in Sherman Oaks better. As a plus, Sushi Note, which is owned by the same people who own Augustine Wine Bar, offers wine pairings.
