Second the Cordis, great location, nice hotel with a rooftop pool, street markets and street entertainment every night. Definitely get an Octopus card, it makes moving about so easy. I'd also recommend walking The Peak Circular Walk for terrific views, do this and don't waste money on tickets for the tourist trap up there. Enjoy Hong Kong.
