How do I know this to be true? Because when I open an anonymous web browser, lo and behold, there are tons of econ+ seats that do not show up when I’m signed into my husband’s United account.

Occasionally happens to me. Make sure you are logged in, if it looks like you are then log out and log in again, That usually fixes it.
