They have their own data on how many people are already buying connecting tickets on the route, Various firms also do that analysis. It's a big part of the business. As for incremental demand that might be stimulated by a new flight, again, there are people who are experts in this field who will use whatever data they have access to.
Was listening to a podcast recently on Jetblue... I think there was mention of some mandatory data sharing requirements about ticket sales?
Could just be US domestic data though. I imagine global data sharing would be complex and fraught with privacy limitations etc...
