Especially in limited service properties, guest's dietary concerns are pretty irrelevant. You're told to put out XYZ by corporate with little to no deviation. If there is an issue with allergies or if someone doesn't eat something, more than likely they're going to have to skip out versus a property at that level accommodating them.

One potential wrinkle might be canned vs powdered gravy — I have seen a "just add water" mix in stores.
On the other end of the spectrum, if the property has sausage patties elsewhere on the menu, they might chop some up and add them into the gravy.
The type of gravy that you're supposed to use is the one below which does indeed have finely ground pork in it. There are other offshoots of gravy you could buy, but this is very much the one you are suppose to buy if available. IME, the gravy is always canned.
