I would assume so but at the end of the day, there are only so many commercial suppliers a chain property is going to be allowed to buy from unless they're going to go rogue and source things from non-approved places which you can do, but you had better hope that corporate can't see your F&B purchases or that you really know when your QA audits are.
One potential wrinkle might be canned vs powdered gravy — I have seen a "just add water" mix in stores.
On the other end of the spectrum, if the property has sausage patties elsewhere on the menu, they might chop some up and add them into the gravy.
