2. We have a 15 hour connection time in ADD. I understand this comes with a hotel voucher normally to their Skylight Hotel (if space is available). Does this require going through Immigration to access it? Do you have to leave the secure area to access it?
There are two Skylight Hotels now - one is the main Skylight which requires going through immigration and the other is the new In-Terminal Skylight which is airside. I believe they are (for now at least) letting passengers pick which one they prefer - that may not be the case by the time you travel though. In any case, the voucher includes the transit visa, plus all meals and transfers. The main Skylight is much nicer of course and probably worth going through immigration for a 15-hour stopover.

3. I am trying to figure out whether we should take active advantage of our 15 hrs at ADD to check out the city or whether it is more prudent to just stay in the airport area. In the ET app they offer a city tour during our time at ADD. There is some kind of coffee tour as well for sale. Are they worth doing? Are there security issues or is it advisable to stay in the hotel/airport?
Addis has no security issues right now (check again closer the time!) beyond the usual petty theft, etc.. common to any big city. If you take an organised day tour during your layover, the risk is even further reduced. If you have the inclination, take advantage of the layover!

4. I understand that ADD has an ET Lounge for us that we will have free access to. I do not believe that ET has a lounge at our departure airport, HKG. I think that our business class tickets allow us access to a Star Alliance partner lounges in HKG such as United, correct?
You will receive an invitation to ET's designated contract lounge in Hong Kong when you check in there. You will also have access to any of the Star Alliance partner lounges.

5. Our flight segment from HKG to ADD has a 1.5 hr stop at BKK with no change in planes. I presume we have to get off the plane? With our carryon bags? What are our in-airport options, if any, during the brief time at BKK?
Unsure of current protocols at BKK. Someone else can probably answer.

6. Our ADD to ORD segment has a 1 hr stop at DUB with no change in planes. I have the same questions about that as I did in #5.
You stay on board in Dublin and the stop is really quick. The don't even park at the terminal but rather on a remote stand. Usually just 30-45 mins with the doors open while they change crew and refuel. Most people nap as it's like 5am local time.

7. Did I read correctly in a post on this thread that our Global Entry will not be available to us when we arrive at ORD?
No specific reason GE would not be available to eligible passengers arriving on the ET flight.
