We live near Ginza and we eat at the following places regularly:

Gyuan - Beef Specialty You do have to take off your shoes and seating is low and Japanese style...
Close to Gyuan and a bit more private:

Cheap and Cheerful - our go to place as we live in Hatchobori:

and if you want to take a walk on the wild side -- this is our favorite Gibier place:
