When was this, just out of interest? I flew with them out of AMS in March 2022 and we went through the main security and had the same terminal access as any other passenger. It's a hefty walk to the low cost pier from the main amenities but there was no indication that we should have entered through a different security checkpoint.
If you fly easyJet to Non-Schengen destinations, then you go through security and passport control with the other airlines and then trudge your way through the usual terminal down to the Non-Schengen part of pier M.
If you fly easyJet to Schengen destinations, then you go through security by the check-in counters and you find yourself in the small area with a shop, a bar, and a restaurant.
