Be aware that AMS seems to still be experiencing issues with security queues so irrespective of whether you are checking-in or not, you are advised to be at Schipol well in advance of your flight, and obviously if you are checking-in a bag, be there even earlier.
Sadly, my luggage will weigh 25 kg, and won't qualify as a "carry-on" cabin bag. So I may end up checking it in at the easyJet counters.
Well, let's say that my flight on easyJet departs AMS at 10:00. If I need to check in luggage and deal with security screening queues, at what time should I get to Schipol?
