How big is your bag? If it fits U2's 'large cabin bag' size, you could select 'Standard Plus' when booking which would enable you to take a larger bag on board (56 x 45 x 25 cm), get an advanced seat assignment near the front of the aircraft with priority boarding for less than the cost of putting a bag in the hold. And then you wouldn't have to bother about check-in.

Be aware that AMS seems to still be experiencing issues with security queues so irrespective of whether you are checking-in or not, you are advised to be at Schipol well in advance of your flight, and obviously if you are checking-in a bag, be there even earlier.

U2 in-flight service is fine - IMO opinion, it's better than domestic Y on UA, AA etc.
